Stuffed eggs have always been my granny’s forte. When we had some guests coming for lunch, she would prepared stuffed eggs as (one of) the appetizers. We had our own chickens and our own vegetable garden back then, so more than farm to table, these eggs where from backyard straight into the kitchen.

Nowadays I don’t wonder anymore why granny used to like to make this kind of appetizer so often. Besides the fact that she had organic eggs right there at home, stuffed eggs are easy to make, full of flavor and very filling.

Together with Smeg Nordic, I propose you three different recipes for this Italian classic: a traditional one and two recipes with a Nordic twist, smoked salmon and dried meat. Every recipe start with the basic egg yolk paste and from that you can add more ingredients to personalize it and add flavor. You can also choose to prepare more than one kind of stuffed eggs at a time to have a real appetizer feast!

Stuffed Eggs – the basic egg yolk paste

  • 6 eggs
  • 1 tbsp mayonnaise
  • ½ tbsp olive oil
  • Pinch of salt

Instructions

  • Place the eggs in a saucepan and cover them with water. When the water will start to boil, turn off the stove and leave the eggs in the boiling water for 9 minutes.
  • Replace the hot water with cold and let the eggs cool down. Peel the eggs and cut the in half lengthwise. Remove the egg yolks carefully with a spoon. Set aside the egg whites on a plate.
  • Blend the egg yolks, the mayonnaise, olive oil and a pinch of salt till smooth.

1 – The Original Recipe

  • 1 ½ tsp anchovy paste or 2 tbsp canned tuna fish
  • Fresh parsley

Instructions

  • Chop finely a few leaves of parsley.
  • Add the anchovy paste or tuna to the egg yolk paste.
  • Pipe the paste into the egg whites.

2 – Smoked Salmon Stuffed Eggs

  • 60 g smoked salmon
  • 1 ½ tsp lemon juice
  • ¼ tsp dill

Instructions

  • Chop finely the smoked salmon.
  • Add the salmon, lemon juice and dill to the egg yolk paste.
  • Pipe the paste into the egg whites.
